NUTR 241 - Food and Culture2.00 credit hours Explores food cultures and eating traditions in the United States and Globally. Nutrition principles are applied to evaluate healthy eating behaviors and diet quality across cultures. Barriers to adopting unfamiliar eating traditions or incorporating unfamiliar foods into the diet are discussed and current dietary guidelines are evaluated for cultural diversity. Students complete a project that adapts a nutrition education tool to reflect different food cultures.
